Here are the instructions again for making your portrait. To make it low poly, use just polygon shapes and don't worry as much about highlights and shadows. When you fill the shapes in, the highlights and shadows will become apparent. Pay attention to how the lips, eyes, nose, were created in these portraits below to help guide the way you will create your shapes.
